Four Seasons - Fermentation

Parcels of fruit from all the different blocks on our vineyard are fermented separately in open fermenters for 4-6 days. This is a relatively short time on skins, but the warmth of the ferment fixes the colour, and regular pump-overs blow off the alcohol and preserve the varietal character of each variety.
